I've done 3 session backups of my C Drive & now if I go to Restore the default highlight is "All Sessions"
If I wish to restore the latest backup should I proceed from "All Sessions" or should I pick "Session 3" to restore.
Are these options the same ? If not what is the difference ?

Restore dated session or all sessions
All sessions shows you all files from each backup session, so if the outlook.pst file is been backed up then 3 versions of outlook.pst will be shown in the restore form. This option was designed for when you want to restore an old version of a file, but are not sure which version.
To restore a PC back to a particular date you must selected a dated session - AISBackup will complain if you choose all sessions in any case.
